In what is characterized as a “small study” published in the Journal of Nutrition, Tufts University researchers have determined that people who consumed two bowls each of soup made from tomatoes, cucumbers, green peppers, olive oil, onions and garlic every day for two weeks saw Vitamin C levels raised and stress levels reduced.
